This is a very simple gratin, mainly using leftovers (chicken and rice), ideal for a Sunday night supper.

Step by step recipe


Stage 1 - ⌛ 10 min.
Gratin of chicken with rice and sautéed mushrooms : Stage 1
Prepare 300 g mushrooms, then cut them into small pieces.

Stage 2 - ⌛ 8 min.

Pour 4 tablespoons olive oil into a frying pan on high heat. When good and hot, add the mushrooms.

Sauté untl lightly browned.

Set aside.

Cut 200 g cooked chicken into small pieces.

Set aside.

Stage 4 - ⌛ 5 min.

Butter a gratin dish and spread 200 g cooked rice in an even layer in the bottom.

Stage 5 - ⌛ 2 min.

Arrange the pieces of chicken on the rice...

...then the mushrooms.

Stage 7 - ⌛ 20 min.

Top with 100 g grated cheese, then bake for 20 minutes until the cheese has melted and is lightly browned.

You can finish browning the top under the grill.
Remarks
The stated proportions are for guidance, so do adapt the recipe to your own taste and whatever you have to hand.

If your cooked rice looks a bit dry, mix a few spoonsful of olive oil or cream into it.
Keeping: Several days in the fridge, covered with plastic film. Reheats very well..
