Sautéed oyster mushrooms
When oyster mushrooms are about, it's worth making the most of them. Why not try this very simple sauté recipe? The mushrooms are fried and finished with just a little parsley and lemon juice.

Step by step recipe


Stage 1 - 10 min.
Sautéed oyster mushrooms
Prepare 800 g mushrooms (oyster mushrooms): trim off the stalks if necessary, then brush rapidly under running water if they are at all dirty. Cut into pieces and dry.

Stage 2 - 5 min.
Sautéed oyster mushrooms
Coarsly chop the parsley leaves.

Prepare and finely chop 1 onion (small).

Stage 3 - 1 min.
Sautéed oyster mushrooms
Melt 50 g butter in a frying pan on high heat, When good and hot add the chopped onion, salt and pepper.

Cook for 1 minute without colouring.

Stage 4 - 1 min.
Sautéed oyster mushrooms
Add the mushrooms...

Stage 5 - 5 min.
Sautéed oyster mushrooms
...and cook, stirring frequently.

Stage 6
Sautéed oyster mushrooms
Salt and pepper at the end of cooking, then take off the heat and add the chopped parsley and lemon juice.

Stage 7
Sautéed oyster mushrooms
Mix well and it's ready.
Remarks
Of course, you can use other mushrooms instead of the oyster mushrooms.

It is worth using clarified butter in stage 3 as it fries better without burning.
Keeping: Should be eaten immediately.
