Step by step recipe

Chestnut cake : Photo of step #1 Put in a bowl or the bowl of your food processor, 125 g butter and 125 g caster sugar.

Chestnut cake : Photo of step #3 Add 4 eggs then sieve 125 g chestnut flour, add 1 sachet baking powder, 125 g flour, and finally 1 pinch salt and 100 g marrons glacés (candied chestnuts) cut small.

Preheat oven to 392°F (200°C).

Remarks

You can find chestnut flour in organic stores, it is very necessary to sieve it before using, because it has an unfortunate tendency to become lumpy.

If you are making a cake for adults (I just mean "that will not be eaten by children"), I recommend you soak the glacé chestnuts for an hour or two in a little whisky, and then incorporate a tablespoonful of this soaking whisky into the mixture. Use any whisky left over to make Irish coffee.
