A very simple dish, and a bit of a cheeky one at that: Brussels sprouts cooked on the side, diced ham, cubed potatoes, and a bit of grated cheese to bind it all together.

Step by step recipe


Stage 1 - 30 min.
Frichti from Bruxelles
Prepare and cook 500 g Brussels sprouts, drain after cooking.

Set aside.

Stage 2 - 10 min.

In a small frying pan over medium heat, pour in 2 tablespoons olive oil and when it's hot add 100 g ham which you've cut into small cubes.

Brown to taste, then set aside.

Stage 3 - 15 min.

In the same pan, still over medium heat and without washing, pour in 4 tablespoons olive oil and when it's hot, add 150 g cooked potatoes which you've cut into large cubes.

Brown to taste, then set aside.

Stage 4 - 1 min.

In a larger frying pan, over medium heat, pour in 3 tablespoons olive oil, then when it's hot, add 1 shallot which you've chopped up.

Season with salt and pepper, then cook for 1 minute without browning.

Stage 5 - 2 min.

Add the Brussels sprouts, potatoes and ham and mix well.

Stage 6 - 2 min.

Finish with 100 g grated cheese, mix one last time...

Stage 7 - 3 min.

... and let the cheese melt.

Your frichti is ready.
Remarks
For the ham, it's best to use the heel, which is easier to dice.

For the potatoes, don't hesitate to use leftovers from another meal, such as raclette or a hot box.

Gourmets can add 150g of cream to the cheese.
Keeping: 1 or 2 days in the fridge, protected by cling film.
