  • 1 Greek yoghurt 13 cup Greek yoghurt
  • 2 cream cheese ¼ cup cream cheese
  • 3 lemon juice ½ tablespoon lemon juice
  • 4 cashew nuts 1 ½ tablespoon cashew nuts
  • 5 sheets of brick pastry 2 sheets of brick pastry
  • 6 cooked spinach 23 cup cooked spinach
  • 7 oil oil
  • 8 salt salt
  • 9 pepper pepper

Step by step recipe


Stage 1 - 4 min.
Spinach and cashew brik rolls
Mix together 13 cup Greek yoghurt, ¼ cup cream cheese and ½ tablespoon lemon juice.

Salt lightly and pepper generously.

Check the seasoning.

Set aside.

Stage 2 - 2 min.
Spinach and cashew brik rolls
Chop 1 ½ tablespoon cashew nuts.

Lay a sheet of brik pastry in front of you.

Stage 4
Spinach and cashew brik rolls
Spread a bed of spinach over the third nearest to you, then add a layer of cheese mixture and scatter cashew nuts on top.

Roll up the pastry into a neat parcel, like a spring roll.

Pour a little oil into a large frying pan on high heat. When really hot, fry the rolls until golden brown all over.

Remarks
To bring out even more cashew flavour, toast the nuts first.

You can use a different kind of cheese if you prefer, such as feta..
