Step by step recipe


Stage 1 - 10 min.
Cucumber, avocado and mussel salad
Prepare ¾ cup cucumber and dice finely. Put in a salad bowl.

Stage 2 - 4 min.
Cucumber, avocado and mussel salad
Add ½ spring onion (scallion), finely sliced, and some chopped parsley.

Stage 3 - 3 min.
Cucumber, avocado and mussel salad
Prepare ½ avocado and slice, then drizzle ½ tablespoon lime juice. over.

Add to the bowl.

Stage 4 - 2 min.
Cucumber, avocado and mussel salad
Add 0 kg cooked mussels.

Stage 5 - 2 min.
Cucumber, avocado and mussel salad
Finish by adding 2 tablespoons Rémoulade dressing. Mix well and check the seasoning.

For a more attractive presentation, scatter a few chive flowers over the top.

Remarks
The mussels can be pre-cooked either very simply ("à la marinière"), or with more flavour, such as "à l'escabèche" (a tangy Spanish method with vinegar).

You can use a simple mayonnaise or rémoulette dressing instead of the rémoulade.
