Chickpeas go well with cauliflower, so here is a salad that makes the most of this with sliced radishes for extra crunch.

  • 1 cauliflower 800 g cauliflower
  • 2 radishes 10 radishes
  • 3 tinned (canned) chickpeas 300 g tinned (canned) chickpeas
  • 4 herbs of your choice herbs of your choice
  • 5 rémoulade dressing 150 g rémoulade dressing
  • Total weight: 1,350 grams

Step by step recipe


Stage 1 - 10 min.
Cauliflower and chickpea salad
Prepare 800 g cauliflower, slice and put in a bowl.

Stage 2 - 5 min.
Cauliflower and chickpea salad
Add 10 radishes in thin slices (a mandolin is ideal for this).

Stage 3 - 1 min.
Cauliflower and chickpea salad
Add 300 g tinned (canned) chickpeas.

Stage 4 - 3 min.
Cauliflower and chickpea salad
Add the chopped herbs, 150 g rémoulade dressing and mix well. Your salad is ready.
Remarks
If you are not keen on rémoulade dressing, use a simple french dressing (vinaigrette) instead.
Keeping: 1 or 2 days in the fridge, covered with plastic film.
