By French standards, this hardly qualifies as an omelette: beaten eggs, simply slammed in the pan with sautéed shiitake mushrooms in soy sauce.

Step by step recipe


Stage 1 - 3 min.
Shiitake eggs
Break 4 eggs into a bowl, salt, pepper and whisk until evenly mixed.

Set aside.

Stage 2 - 15 min.
Shiitake eggs
Prepare 2 lb + 3.2 oz mushrooms (preferably shiitake): trim off the stalks, peel or brush the caps under running water, then cut into small pieces.

Coarsely chop the parsley.

Prepare 1 shallot.

Stage 3 - 1 min.
Shiitake eggs
Melt 1.1 oz butter in a large non-stick frying pan on medium heat. When good and hot, add the shallot, salt and pepper.

Cook for 1 minute without colouring.

Stage 4 - 1 min.

Add the mushrooms...

Stage 5 - 7 min.

...and fry over high heat until nicely browned (but do not salt).

Stage 6 - 2 min.
Shiitake eggs
Then add 4 tablespoons soy sauce and keep stirring until completely evaporated.

Stage 7 - 1 min.
Shiitake eggs
Turn down the heat and add the parsley.

Stage 8 - 1 min.

Pour in the beaten eggs...

Stage 9 - 3 min.
Shiitake eggs
...and with a soft spatula draw the sides in towards the centre to help the eggs cook evenly.

Take off the heat as soon as the eggs begin to set into one mass but are still slightly runny. Do not overcook or the eggs will dry out and be past their best.

Stage 10
Shiitake eggs
Cut into portions and serve without delay.
Remarks
If liked, add a drizzle of vinegar just before serving.
Keeping: Should be eaten immediately.
