Apparently, Napoléon Bonaparte had a delicate stomach, so his cook made his cream sauces a little gentler with tomato.

Here is a version for green beans, cooked in two stages, with a cream and tomato sauce.

Step by step recipe


Stage 1 - 5 min.
Green beans "Napoléon"
Prepare 3 ½ cups green beans then cut into medium-sized pieces.

Set aside.

Stage 2 - 1 min.
Green beans "Napoléon"
Heat cup + 3 tablespoons butter in a large pan on high heat until it froths.

Add the finely chopped 1 shallot.

Salt, pepper and cook for 1 minute without colouring.

Stage 3 - 5 min.
Green beans "Napoléon"
Add 1 cup liquid cream, mix well and bring to the boil.

Stage 4 - 2 min.
Green beans "Napoléon"
Add 1 teaspoon tomato paste, mix well, then check the seasoning.

Stage 5 - 5 min.
Green beans "Napoléon"
Add the green beans, mix well and leave to heat through for a few minutes.

Stage 6
Green beans "Napoléon"
Serve on its own or to accompany meat, for example.
Remarks
The quantity of tomato paste can be adapted to suit your taste, so add more or less as you prefer.
Keeping: 1 or 2 days in the fridge, covered with plastic film.
