Step by step recipe


Stage 1 - 15 min.
Soft apple cookies : Stage 1
Put into a mixer bowl: 75 g flour, 65 g brown sugar, 75 g butter, 75 g rolled oats, 15 g raisins, 40 g cream, 20 g flakeds almonds, 2.5 g baking powder and 1.5 pinch fine (or table) salt.

Peel 1 apple and cut into small pieces. Add to the bowl.

Stage 2 - 3 min.

Knead until evenly mixed.

Stage 3 - 15 min.

Weigh the dough out into equal pieces of about 40 g.

Preheat the oven to 390°F (200°C).

Stage 4 - 5 min.
Soft apple cookies : Stage 4
Roll the dough into balls with your hands (if you are making these with children, this is the bit they enjoy best), and arrange these on a sheet of cooking parchment laid on a baking sheet.

Stage 5 - 2 min.
Soft apple cookies : Stage 5
Flatten into thickish discs.

Stage 6 - 20 min.
Soft apple cookies : Stage 6
Bake for about 20 minutes.

Leave to cool on a wire rack.
Remarks
You will note that there is no egg in this recipe. Using cream instead makes the cookies softer.
Keeping: Several days in an airtight tin or jar.
