  • 1 whole milk 11.8 oz whole milk
  • 2 brown sugar 1.2 oz brown sugar
  • 3 rice 2.7 oz rice
  • 4 star anise 1 star anise
  • 5 greens cardamoms beans 3 greens cardamoms beans
  • 6 cinnamon 1 pinch cinnamon
  • 7 raisins 0.7 oz raisins
  • 8 whole almonds 0.7 oz whole almonds
  • 9 cashew nuts 0.7 oz cashew nuts

Step by step recipe


Stage 1 - 20 min.
Indian rice pudding : Stage 1
In a large saucepan over low heat, pour in 11.8 oz whole milk, add 1.2 oz brown sugar, 2.7 oz rice, 1 star anise, 3 greens cardamoms beans, 1 pinch cinnamon and 0.7 oz raisins.

Cook gently, uncovered, stirring occasionally.

Stage 2 - 15 min.

Meanwhile, start your oven at 150°C (300°F) and place a baking sheet on which you've poured 0.7 oz whole almonds and 0.7 oz cashew nuts to roast for about 15 minutes (no need to preheat the oven for this).

Stage 3 - 3 min.

Once the dried fruit has cooled, chop coarsely.

Stage 4 - 10 min.
Indian rice pudding : Stage 4
Continue cooking the rice until tender and creamy.

Stage 5 - 1 min.
Indian rice pudding : Stage 5
Add the chopped dried fruit...

Stage 6 - 1 min.
Indian rice pudding : Stage 6
...and mix it all together.

Your Indian rice is ready.
Remarks
If possible, use basmati rice to get even more in the spirit of Indian cuisine.
Keeping: 1 or 2 days in the fridge, protected by cling film.

  • It's not really the subject of this recipe, but yes, you can marinate very well in yoghurt, often with spices for the tenderness and flavour of the meat
