Cut 1 cup cooked green beans into small pieces.

Set aside.

Cut 1 cup cooked potatoes into large cubes.

In a frying pan over medium heat, pour 2 tablespoons oil and when hot, add the potatoes.

Roast until golden brown, then remove from heat and set aside.

In a large saucepan over medium heat, pour in 1 tablespoon butter and, when hot, add the minced shallot, salt and pepper.

Cook for 1 minute, without browning.
