Remarks
It's even better if you can get several kinds of mushrooms. This time I have only used oyster mushrooms, but adding chanterelles would be great.

In which case I suggest you cook each type of mushroom separately, in the same way (2 minutes), and put in the strainer one after the other. In this way each kind keeps its characteristic flavour, and the mixing happens at the last minute.

No spring onions? Just use normal ones.

Instead of ordinary cured ham, if possible use those amazing Spanish hams with their great taste.
Keeping: Several days in the fridge, covered by a plastic film.
Source: Home made.

How to prepare tomatoes
Yes, I know you will say to me: why peel tomatoes? The answer is very simple: it's much better, gives a better texture, softer in the mouth. The skin is tough, adds nothing to the taste (and you will have noticed that commercial tomatoes have practically no taste), and finally it's there (on/under the skin) that the awful chemical products that the fruit receive during growth, are concentrated (treatments, pesticides, etc...).

Granola
Granola
Granola is a tasty, crunchy cereal mix with nuts and seeds. Often thought of as an American version of muesli, it is bound with a little maple syrup and toasted in the oven. This is simple to prepare and goes well with lots of other things (dairy, fresh or stewed fruit, etc.) for a delicious breakfast.

European glass
European glass
A little dessert that's rather long to make, but which will always impress your guests. Layered in a glass: a jellied red fruit coulis, a layer of pineapple charlotte cream, a layer of kiwi coulis, topped with a peeled clementine segment. It's "european" because it resembles the italian flag, and in another version with apricot instead raspberries, the irish flag (a country so dear to me).
