Step by step recipe


Stage 1 - 5 min.
Chocolate almond cookies
Tip 1 lb + 8.0 oz ground almonds, 2 lb + 9.2 oz flour, 13.2 oz icing sugar, 3 eggs into the bowl of your mixer and add 13.6 oz butter cut into pieces.

Stage 2 - 4 min.
Chocolate almond cookies
Knead on low speed for 3 or 4 minutes until evenly mixed.

Stage 3 - 10 min.
Chocolate almond cookies
Crush 6.6 oz dark chocolate into small pieces and add to the mixture with 3 teaspoons powdered cocoa. Knead for a further 2 or 3 minutes.

Stage 4 - 1 hour

Gather the dough together and form into a roll about 4 cm (2") diameter, then wrap in plastic film and refrigerate at least one hour or overnight.

Stage 5 - 7 min.

Preheat oven to 180°C (360°F).

Remove dough from fridge and cut slices 0.5 cm ( ¼") thick.

You will find that as you slice, the roll of dough will deform, so turn it as you go, and if necessary reshape the slices.

Stage 6 - 3 min.

Place the slices of dough on a baking sheet.

Stage 7 - 20 min.
Chocolate almond cookies
Cook for about 20 minutes, then leave to cool on a wire rack.
Remarks
It is important not to overcook these cookies, otherwise they will become dry and less tempting.

You can use commercially prepared chocolate chips rather than breaking up a chocolate bar.
Keeping: Several days in a closed metal box.
