Step by step recipe


Stage 1 - 5 min.
Chocolate madeleines
Melt 13.2 oz dark chocolate broken in pieces in a bain-marie then leave to cool.

Stage 2 - 1 min.
Chocolate madeleines
Sieve together 14.1 oz icing sugar and 8.8 oz flour.

Stage 3 - 2 min.
Chocolate madeleines
Add 12.8 oz ground almonds and mix.

Stage 4 - 2 min.
Chocolate madeleines
Beat 12 egg whites about one minute, just until they become slightly frothy, not like for meringue.

Stage 5 - 5 min.
Chocolate madeleines
Add the mix of flour, sugar and almonds to the beaten egg-whites, beat again to mix.

Add 12.3 oz noisette butter and beat again to mix thoroughly.

Stage 6 - 30 min.
Chocolate madeleines
Add melted chocolate, 2 tablespoons honey, and beat again to mix thoroughly.

Refrigerate mixture for 30 minutes.

Stage 7 - 10 min.
Chocolate madeleines
Pour mixture into moulds, using a forcing bag (easier) or a tablespoon, then put back in fridge for 30 minutes.

Stage 8 - 20 min.
Chocolate madeleines
Preheat oven to 150°C ou 302°F and cook for about 20 minutes.

Turn out onto a wire rack to cool. Serve at room temperature (not too warm).
Keeping: Several days in a closed metal box.
