Step by step recipe


Stage 1 - 20 min.
Sliced chicken with mushrooms and broccoli
Prepare 800 ml broccoli.

Stage 2 - 5 min.
Sliced chicken with mushrooms and broccoli
Prepare and slice 1 litre mushrooms.

Stage 3 - 5 min.

Slice 476 ml chicken breast (take no notice of the strange colour of this chicken breast in the photo. It was frozen and I thawed it by poaching it in chicken stock).

Stage 5 - 2 min.
Sliced chicken with mushrooms and broccoli
Heat 4 tablespoons olive oil in a large saucepan then add the chopped shallot, salt and pepper. Cook for 1 or 2 minutes.

Stage 6 - 8 min.
Sliced chicken with mushrooms and broccoli
Add the mushrooms and cook, stirring regularly.

Note: if the mushrooms you are using give off a lot of water, drain this off and discard it to speed up the cooking.

Stage 7 - 3 min.
Sliced chicken with mushrooms and broccoli
Set aside on a plate.

Stage 8 - 1 min.
Sliced chicken with mushrooms and broccoli
Using the same pan, heat 4 tablespoons olive oil, then add the chicken.

Stage 9 - 8 min.

Cook until lightly browned...

Stage 10 - 2 min.
Sliced chicken with mushrooms and broccoli
...then add the broccoli and mushrooms, salt and pepper. Stir well.

Stage 11 - 5 min.
Sliced chicken with mushrooms and broccoli
The dish is ready when the broccoli is heated through.Check seasoning.

You can add 2 knobs butter at the last minute, if you wish.
Remarks
For added flavour, squeeze lemon juice over the mushrooms after cooking.
Keeping: A few days in the fridge, covered with stretch film. .
