This quick salad includes chickpeas, of course, but with spring onions, radishes and chopped coriander, too.

Step by step recipe


Stage 1 - 3 min.
Chickpea salad
Drain 300 g tinned (canned) chickpeas and mash them roughly with a fork.

Stage 2 - 1 min.
Chickpea salad
Put into a bowl.

Stage 3 - 7 min.
Chickpea salad
Add 150 g spring onion (scallion) and 200 g radishes sliced into rounds.

Stage 4 - 3 min.
Chickpea salad
Finish by adding the chopped coriander and 5 tablespoons french dressing (vinaigrette). Mix well and it's ready.
Remarks
For a more exotic flavour, try making the vinaigrette with sesame oil.
Keeping: A day or two in the fridge, covered with plastic film. .
