Apple strudel is a traditional pastry from central Europe. It is like a large apple turnover, usually served in slices.

Here is a version with apples, walnuts, almonds and rum-soaked raisins.

Step by step recipe


Stage 1 - 10 min.
Apple Strudel

Prepare the strudel filling


Leave 100 g raisins to soak and swell in the rum.

Stage 2 - 10 min.

Peel 4 apples, remove the core and cut into small pieces.

Stage 3 - 3 min.

In a bowl, mix the apples, drained raisins, 40 g ground almonds, 40 g caster sugar and 10 g vanilla sugar.

Stage 4 - 4 min.

Roll the strudel


Spread the filling mixture over 4/5 of the puff pastry...

Stage 5 - 2 min.

...and roll up into a "sausage". Leave the end underneath to keep the roll sealed.

Stage 6 - 20 min.

Glaze the roll and leave in the fridge to rest for 20 minutes.

Stage 7

Chop 30 g walnut kernels fairly finely.

Stage 8 - 3 min.

Bake the strudel


Preheat the oven to 430°F (220°C).

Glaze again and sprinkle with the chopped walnuts.

Stage 9 - 40 min.
Apple Strudel
Bake for about 40 minutes.
Leave until just warm and serve in slices.
Remarks
Strudel is delicious served warm with chantilly cream.
