For 12 people, you will need:
  • 1 cashew nuts 150 ml cashew nuts
  • 2 oil 18 tablespoons oil
  • 3 soy sauce 6 tablespoons soy sauce
  • 4 lime juice 3 tablespoons lime juice
  • 5 rice vinegar 3 tablespoons rice vinegar
  • 6 Vietnamese fish sauce (nuoc mam) 3 tablespoons Vietnamese fish sauce (nuoc mam)
  • 7 spring onion (scallion) 6 spring onions (scallions)
  • 8 garlic clove 3 cloves garlic
  • 9 chicken breast 1 litre 249 ml chicken breast
  • 10 herbs of your choice herbs of your choice

Step by step recipe


Stage 1 - 1 min.
Thai-style Chicken with Cashew Nuts
Pour 18 tablespoons oil into a pan on medium heat. When hot, add 150 ml cashew nuts.

Stage 2 - 3 min.

Fry the cashew nuts until lightly browned, stirring frequently...

Stage 3 - 1 min.

...then drain them and save the cooking oil for later.

Set aside.

Stage 4 - 2 min.

Prepare the sauce by mixing 6 tablespoons soy sauce, 3 tablespoons lime juice, 3 tablespoons rice vinegar and 3 tablespoons Vietnamese fish sauce (nuoc mam).

If you enjoy spicy flavours, add some chilli to suit your own taste.

Stage 5 - 3 min.

Pour 2 tablespoonsful of the cooking oil from the cashew nuts back into the same pan on medium heat. Add the chopped 6 spring onions (scallions) and 3 cloves garlic and cook for 1 or 2 minutes.

Set aside.

Stage 6 - 7 min.
Thai-style Chicken with Cashew Nuts
Still using the same pan on medium heat, use 2 more tablespoonsful of the cashew nut cooking oil to fry 1 litre 249 ml chicken breast, cut into small dice.

Stage 7 - 1 min.

When nicely browned, pour in the sauce...

Stage 8 - 1 min.

...the cashew nuts, onion, garlic and the herbs of your choice. Try if possible to include some lemon balm, it's important for that "Thai" flavour).

Stage 9 - 5 min.

Leave the sauce to reduce a little, stirring frequently.

Stage 10
Thai-style Chicken with Cashew Nuts
Serve on a bed of plain white rice.
Remarks
If there is not enough oil left from cooking the cashew nuts, just use plain oil.
Keeping: Several days in the fridge, covered with plastic film.
