Step by step recipe


Stage 1 - ⌛ 10 min.
Harvest Gratin : Stage 1
Prepare 700 g cauliflower.

Stage 2 - ⌛ 5 min.
Harvest Gratin : Stage 2
Cook in plenty of boiling salted water just until barely tender.

Set aside.

Stage 3 - ⌛ 10 min.
Harvest Gratin : Stage 3
Prepare 500 g purple globe artichokes.

Stage 4 - ⌛ 5 min.
Harvest Gratin : Stage 4
Boil in salted water and, like the cauliflower, only until barely done.

Stage 5 - ⌛ 1 min.
Harvest Gratin : Stage 5
Preheat the oven to 390°F (200°C).

Butter a gratin dish.

Stage 6 - ⌛ 2 min.

Arrange a layer of cauliflower in the bottom, then a layer of artichoke.

Salt and pepper lightly.

Stage 7 - ⌛ 2 min.

Pour half the bechamel sauce over.

Stage 8 - ⌛ 2 min.
Harvest Gratin : Stage 8
Then add the rest of the cauliflower and pour the remaining bechamel over.

Stage 9 - ⌛ 3 min.
Harvest Gratin : Stage 9
Top with 250 g mozzarella in thin slices.

Lightly salt and pepper once more.

Stage 10 - ⌛ 35 min.
Harvest Gratin : Stage 10
Bake for 30 to 40 minutes...

...until the top is nicely browned.
Remarks
If you don't have any purple artichokes, use a normal artichoke sliced into rounds.
Keeping: Several days in the fridge, covered with plastic film.
