Lemon Mayonnaise
This is almost as simple to make as a plain mayonnaise, but with the double lemon flavour of both zest and juice for a delicate, fresh tang.

Step by step recipe


Stage 1 - 3 min.
Lemon Mayonnaise
Use a jug or high-sided container. Add ½ Egg, ½ tablespoon Mustard, 100 g oil, salt and pepper.

Grate the zest of a lemon into the container.

Stage 2 - 1 min.
Lemon Mayonnaise
Squeeze one tablespoonful of lemon juice and add this.

Stage 3 - 1 min.
Lemon Mayonnaise
Blend for a few seconds...

Stage 4
Lemon Mayonnaise
...and your lemon mayonnaise is ready.
Remarks
If you'd like you mayonnaise extra tangy, you can add more lemon juice, up to two tablespoonsful.
Keeping: 1 or 2 days in the fridge, covered with plastic film. .
