Step by step recipe

Stage 1 - 10 min.
Pasta with mushrooms
Prepare and cut into small 500 g mushrooms pieces.

Stage 2 - 5 min.
Pasta with mushrooms
Peel 4 shallots and chop.

Stage 3 - 2 min.
Pasta with mushrooms
Pour 6 tablespoons olive oil into a large saucepan on high heat.

When hot, add the chopped shallot, salt and pepper and cook for 1 or 2 minutes without colouring.

Stage 4 - 5 min.
Pasta with mushrooms
Then add the mushrooms, mix well and sauter for a few minutes, but do not salt, otherwise the mushrooms will give off a lot of water.

Stage 5 - 5 min.
Pasta with mushrooms
Add 400 g liquid cream, mix well, then turn down the heat and leave to reduce slightly,.

Stage 6 - 6 min.
Pasta with mushrooms
Meanwhile, cook the pasta in boiling salted water.

Stage 7 - 2 min.
Pasta with mushrooms
Drain thoroughly...

Stage 8 - 2 min.
Pasta with mushrooms
... before adding the creamy mushroom sauce.

Mix well, add a few chopped parsley leaves and turn off the heat.

Stage 9
Pasta with mushrooms
Serve without delay.
Remarks
For a more pronounced mushroom flavour, add half a packet of dried mushroom soup at the same time as the cream. If you do this, there is no need to leave the sauce to reduce as it will thicken rapidly.

If you use button mushrooms, do take care not to overcook them, as they tend to give off a lot of water at the least provocation (this is why we don't salt them before cooking).
Keeping: Several days in the fridge, covered with plastic film. Can be reheated.
Source: Home made.

Crème brulée
Crème brulée
Crème brûlée (burned cream) is quite easy to prepare: it's a simple egg-cream dessert. The only difficulty is in making the delicious crunchy caramel layer on top. The perfect crème brulée (for me) is a cold and soft cream, with on top a nice hot caramel crust. This is a completely new version of the former recipe, with video.

Soft fruits in sabayon
This recipe is made by briefly cooking an assortment of soft fruits (raspberries, blackcurrants, blackberries, blueberries, currants...) with a little sugar to glaze them. They are served in a small dish, covered with a delicious sabayon which can be lightly "burned" on surface.

Home-made terrine of foie gras
Home-made terrine of foie gras
Preparing your own home-made foie gras from raw is immensively satisfying: good quality liver and a simply amazing flavour – much better than anything you can buy. This recipe is a bit tricky, but quite within everyone's grasp, as long as you follow the 3 most delicate stages carefully. These are, in order: de-veining the liver, seasoning and cooking. As usual, I have explained every stage of the recipe in full, with photos to help you.
