Stage 1 -
Prepare and wash 500 g green beans, then cut into short lengths.
Stage 2 -
Bring a large pan of salted water to the boil and cook the beans quickly, just 5 minutes from the time the water comes back to the boil.
Cool under cold water, then drain.
Stage 3 -
2 spring onions (scallions) and chop.
Stage 4 -
Stage 5 -
Melt 2 tablespoons
in a large pan, then add the chopped onions, salt and pepper. Cook while stirring for 2 minutes.
Stage 6 -
Stage 7 -
Add the drained beans and mix well. You will see that this soaks up all the fat in the bottom of the pan.
Stage 8 -
Add the tomatoes, salt lightly and cover.
Stage 9 -
Leave to cook for fifteen minutes on low heat until the tomatoes have broken down into a sauce.
