This salad combines chickpeas with cauliflower in a light yoghurt dressing, flavoured with lemon juice and sesame paste.

  • 1 tinned (canned) chickpeas 500 ml tinned (canned) chickpeas
  • 2 cauliflower 500 ml cauliflower
  • 3 shallot 2 shallots
  • 4 Greek yoghurt 300 ml Greek yoghurt
  • 5 tahini (sesame paste) 2 tablespoons tahini (sesame paste)
  • 6 lemon juice 4 tablespoons lemon juice
  • 7 salt salt
  • 8 pepper pepper

Step by step recipe


Stage 1 - 5 min.
Lebanese-style chickpea salad
Thoroughly drain 500 ml tinned (canned) chickpeas.

Stage 2 - 2 min.

Dry on a cloth.

Stage 3 - 10 min.
Lebanese-style chickpea salad
Prepare 500 ml cauliflower and slice thinly (if you have one, a mandolin is ideal for this).

Stage 4 - 2 min.
Lebanese-style chickpea salad
Put the chickpeas and cauliflower in a salad bowl. Add 2 shallots finely chopped and a little chopped parsley.

Stage 5 - 3 min.
Lebanese-style chickpea salad
Prepare the dressing by mixing 300 ml Greek yoghurt, 2 tablespoons tahini (sesame paste) and 4 tablespoons lemon juice.

Salt and pepper then checking the seasoning.

Stage 6 - 2 min.
Lebanese-style chickpea salad
Pour the dressing into the bowl and mix everything together.

Your salad is ready.
Remarks
If you don't have any lemon juice handy, use a tablespoonful of vinegar instead.

The quantity of tahini can be adapted, either a little more or less, to suit your taste.

For a more authentic Lebanese touch, add a little mint in with the chopped parsley.
Keeping: 2 days at most in the fridge.
