  • 2 cream cheese 100 g cream cheese
  • 3 lemon juice 1 tablespoon lemon juice
  • 4 cashew nuts 40 g cashew nuts
  • 5 sheets of brick pastry 4 sheets of brick pastry
  • 6 cooked spinach 250 g cooked spinach
  • 7 oil Oil
  • 8 salt Salt
  • 9 pepper Pepper
  • Total weight: 595 grams

Spinach and cashew brik rolls : Stage 1
Mix together 150 g Greek yoghurt, 100 g cream cheese and 1 tablespoon lemon juice.

Salt lightly and pepper generously.

Check the seasoning.

Set aside.

Chop 40 g cashew nuts.

Lay a sheet of brik pastry in front of you.

Spread a bed of spinach over the third nearest to you, then add a layer of cheese mixture and scatter cashew nuts on top.

Roll up the pastry into a neat parcel, like a spring roll.

Pour a little oil into a large frying pan on high heat. When really hot, fry the rolls until golden brown all over.

To bring out even more cashew flavour, toast the nuts first.

You can use a different kind of cheese if you prefer, such as feta..
