This Tahitian-inspired salad combines fish cured in lemon juice with lettuce, tomatoes and raw mushrooms.

Step by step recipe


Stage 1 - 5 min.
Tahitian salad
Trim ½ fish fillet and pat dry with absorbant paper.

Stage 2 - 2 min.

Cut into small pieces.

Stage 3 - 5 min.

Put into a bowl, salt and pepper, then add the juice and zest of ½ lemon.

Mix well, cover and refrigerate for at least 1 hour (this can also be prepared the day before).

Stage 4 - 10 min.

Meanwhile, prepare 1 tomato and dice.

Sprinkle with fine salt and mix.

Stage 5 - 10 min.

Prepare 75 g button or field mushrooms, chop it and pour it into a bowl.

Prepare ½ red onion, chop it finely and pour it into the bowl.

Stage 6 - 3 min.

Thoroughly drain the fish...

Stage 7 - 1 min.

...and add to the bowl.

Stage 8 - 4 min.

Shred the lettuce, chop the parsley and add to the bowl.

Stage 9 - 1 min.

Add the tomatoes.

Stage 10 - 2 min.

Finish by adding 2.5 tablespoons french dressing (vinaigrette) and mix well.

Your salad is ready.
Remarks
The fish can be any you prefer, though do choose what is in season.

Lime works well for this, and 2 can be used in place of the lemon.
Keeping: Should be eaten the same day.
