This salad combines the soft texture of haricot beans with the crunch of croutons.



Translator's note: Brittany has its own equivalent of the British Cornwall (hence the similar name), showing how close the languages and cultural roots of the two regions are.

Step by step recipe


Stage 1 - 12 hours
Cornouaillaise salad
The day before, put 500 g white haricot beans in water to soak overnight and soften.

Stage 2 - 40 min.
Cornouaillaise salad
Next day, cook the beans until tender in a large pan of salted water with 2 bayleaves.

Stage 3 - 5 min.
Cornouaillaise salad
Drain thoroughly.

Stage 4 - 3 min.
Cornouaillaise salad
Cut 2 slices bread into dice.

Stage 5 - 5 min.
Cornouaillaise salad
Brown in a small frying pan with 20 g butter.

Stage 6 - 1 min.
Cornouaillaise salad
Put the drained beans into a bowl.

Stage 7 - 1 min.
Cornouaillaise salad
Add 100 g tuna in oil, the chopped herbs and 5 tablespoons French dressing (vinaigrette). Mix well.

Stage 8 - 1 min.
Cornouaillaise salad
Finish by adding the croutons and mix one last time.

Your Cornouaillaise salad is ready.
Remarks
If possible, add the haricot beans while they are still hot to make a warm salad.
Keeping
1 or 2 days in the fridge, covered with plastic film.
