Step by step recipe

Spinach and Mushrooms with Pesto : Stage 1
In a saucepan over medium heat, pour in 4 tablespoons olive oil and when it is hot add 2 shallots minced.

Add salt and pepper, cook for 1 minute without browning.

Add prepared and chopped 500 g mushrooms, salt again and mix well...

...and cook to your liking, typically until the mushrooms have run out of water.

Add 400 g cooked spinach...

Stir and cook for a few minutes, stirring occasionally, until the cream has reduced.

You can use a classic pesto, or a variation like coriander-cashew pesto or tomato pesto sauce.
