Stage 1 - 3 min.
Grilled ham and bechamel sandwiches
Cut 400 g ham in small dices.

I use here a heel of ham, but no problem to use slices, cut them if possible in strips in this case.

Place 8 slices bread in a baking sheet protected by a sheet of baking paper.

You can toast the slices (like the ones on the left in the photo) if you like the crunchiness, but it's not necessary.

Spread the grilled ham.

Stage 10 - 3 min.

Sprinkle with grated cheese.

Stage 11 - 20 min.
Grilled ham and bechamel sandwiches
Put in the oven for about 20 minutes, watch the coloring and don't hesitate to finish with a small blow of grill.

Stage 12
Grilled ham and bechamel sandwiches
Serve hot or warm.
Remarks
You can replace the ham with lardons, or even leftover cold cuts.
Keeping
Best eaten fresh from the oven, but can be reheated.

Crème brulée
Crème brulée
Crème brûlée (burned cream) is quite easy to prepare: it's a simple egg-cream dessert. The only difficulty is in making the delicious crunchy caramel layer on top. The perfect crème brulée (for me) is a cold and soft cream, with on top a nice hot caramel crust. This is a completely new version...

Used very frequently in French cuisine, a secret of French chefs, it adds flavour to a lot of recipes, and it's easy to prepare. Clarified butter
This is a way of melting butter to eliminate all the impurities. The clarified butter can then be heated without spoiling, and is more digestible. It is ideal for cooking at high temperatures where small black specks would spoil the appearance, or for emulsified sauces like béarnaise or mousseline.
