A very green, rather crunchy salad with chiffonade, zucchini and raw artichokes, into which we add the delicious fluffiness of a quick little omelette.

Step by step recipe


Stage 1 - 20 min.
Salad greens and small omelette
Prepare 3 lettuces, and cut into chiffonade.

Place in a salad bowl.

Stage 2 - 5 min.
Salad greens and small omelette
Prepare 1 lb + 15.7 oz courgette, slice and add to the salad bowl.

Stage 3 - 10 min.
Salad greens and small omelette
Prepare 9 purples globe artichokes, but don't cook them, cut them into strips and set aside in lemon water, or better still with a little vitamin c to prevent blackening.

Stage 4 - 2 min.
Salad greens and small omelette
Break 6 Eggs into a bowl, season with salt and pepper and beat quickly with a fork.

Stage 5 - 3 min.
Salad greens and small omelette
Place a small frying pan over medium heat and, when hot, melt 3 knobs butter in it.

As soon as it starts to foam, pour in the beaten eggs.

Stage 6 - 2 min.
Salad greens and small omelette
And quickly cook the eggs, scraping the bottom of the pan with a cheesecloth.

Remove from the heat as soon as they are barely cooked.

Stage 7 - 3 min.
Salad greens and small omelette
Add the chopped parsley, drained and dried artichokes, 15 tablespoons French dressing (vinaigrette) and mix well.

Stage 8 - 2 min.
Salad greens and small omelette
At the last moment, add the eggs, stir gently one last time and serve.
Remarks
If you have medium or large zucchinis instead of small ones, dice them instead of slicing them in step 2.
