Step by step recipe

Leek and celery soup : Stage 1
Prepare 1 celeriac, cut into small pieces.

Stage 2 - ⌛ 10 min.

Prepare 3 leeks, chop.

Stage 3 - ⌛ 3 min.

Prepare and chop 1 shallot.

In a large saucepan over high heat, pour 4 tablespoons olive oil and when hot, add the chopped shallot.

Season with salt and pepper and cook for 1 minute without browning, stirring constantly.

Add the celery and leeks and stir well for 1 minute.

Cover with milk, lower the heat slightly and season with salt.

Cook gently until celery is tender.
