Käsküeche, or cottage cheese tart, is a recipe of Alsatian origin, consisting of a sweetcrust pastry (pâte sablée) base topped with a light cottage cheese cream and, in this version, lime flavors.

Step by step recipe


Stage 1 - 10 min.
Cottage cheese tart
Spread 300 g Sweetcrust pastry (pâte sablée) and line a 26 cm (10-inch) diameter tart tin or circle.

Refrigerate until ready to use.

Stage 2 - 5 min.
Cottage cheese tart
Preheat oven to 180°C (360°F).

In a bowl, pour 350 g cottage (or curd) cheese, the yolks of 2 eggs, 125 g cream, 50 g brown sugar, 10 g Vanilla sugar, the juice and zest of ½ lime, 1 tablespoon Kirsch, 20 g flour and 2 pinches salt.

Stage 3 - 3 min.

Whisk until smooth.

Stage 4 - 5 min.

Separately, beat the egg whites of 2 eggs until stiff, adding 1 tablespoon caster sugar at the end.

Stage 5 - 4 min.

Gently fold the egg whites into the previous mixture using a marysee.

Stage 6
Cottage cheese tart
Mix until light and homogeneous.

Stage 7 - 2 min.
Cottage cheese tart
Pour the mixture into the tart shell.

Stage 8 - 40 min.
Cottage cheese tart
Place low in the oven at 180°C (360°F) for approx. 30-40 minutes.

Stage 9
Cottage cheese tart
Enjoy warm or cold.
Remarks
If you don't have a lime, a lemon will work just as well.

The kirsch can be replaced by another white fruit spirit, or another to your taste.
Keeping: 2 or 3 days in the fridge, protected by cling film.
