Step by step recipe


Stage 1 - 20 min.
Brussels-Bombay salad
Prepare 9 ½ cups Brussels sprouts, slice finely in a bowl.

A mandolin is ideal for this, but if you don't have one, it can be done with a knife.

Stage 2 - 8 min.
Brussels-Bombay salad
Cut 6 slices bread into small pieces, then pour them into a small frying pan over medium heat where you've melted ½ cup butter.

Brown the croutons to taste, stirring occasionally.

Stage 3 - 1 min.
Brussels-Bombay salad
Finish with a sprinkling of 6 tablespoons curry powder, stir well and cook for a further 1 minute.

Leave to cool.

Stage 4 - 5 min.

Cut 23 cup cheese into small pieces. I'm using leftover 2 cheeses (Cantal and reblochon), but use whatever you have on hand.

Stage 5 - 1 min.

Pour the cheese and croutons into the bowl, add the chopped herbs...

Stage 6 - 1 min.
Brussels-Bombay salad
... then 15 tablespoons french dressing (vinaigrette), and mix well.

Your salad is ready.
Remarks
Feel free to adjust the amount of curry to your taste, or add a little chilli or Tabasco sauce if you like.
