In this recipe, the endives are first blanched, then baked with cream and mushrooms in individual cassolettes (small gratin dishes or large ramekins).

Step by step recipe


Stage 1 - ⌛ 15 min.
Individual creamy endive gratins : Stage 1
Prepare 1 onion and chop finely.

If the mushrooms are dried, soak them in warm water, if they are fresh preparethem.

Stage 2 - ⌛ 1 min.
Individual creamy endive gratins : Stage 2
Pour 2 tablespoons olive oil into a pan on medium heat. When hot, add the chopped onion, salt and pepper and cook for 1 minute.

Stage 3 - ⌛ 20 min.

Add 200 ml cream and the mushrooms, salt and pepper, then leave to thicken slightly on low heat.

Check seasoning.

Preheat the oven to 200°C (390°F).

Stage 4 - ⌛ 30 min.

Prepare 8 endives (head of chicory), and divide between the buttered dishes.

Stage 5 - ⌛ 2 min.

Cover with the cream and mushroom mixture.

Stage 6 - ⌛ 1 min.

And bake in the oven...

...until the top is nicely browned.
Remarks
You can replace the chanterelles with other mushrooms. Dried mushrooms, such as black trumpets (also known as horn of plenty) or morels are particularly good.
Keeping: A few days in the fridge in a sealed container. Should be reheated.
