This salad is a mixture of fresh, crunchy ingredients (spring onions, radishes and lettuce) with ribbons of pan-fried chicken, added while still warm.

Step by step recipe


Stage 1 - ⌛ 5 min.
Warm chicken salad : Stage 1
Cut 400 g chicken breast into ribbons.

Set aside.

Stage 2 - ⌛ 5 min.
Warm chicken salad : Stage 2
Prepare 150 g spring onion (scallion) and chop finely (use a mandolin to do this quickly).

Tip into the salad bowl.

Stage 3 - ⌛ 5 min.
Warm chicken salad : Stage 3
Prepare 50 g radishes and chop finely.

Add to the salad bowl.

Stage 4 - ⌛ 5 min.
Warm chicken salad : Stage 4
Prepare 150 g lettuce and shred (chiffonade).

Add to the salad bowl.

Stage 5 - ⌛ 1 min.
Warm chicken salad : Stage 5
Add parsley.

Stage 6 - ⌛ 7 min.
Warm chicken salad : Stage 6
At the last minute: heat 3 tablespoons olive oil in a frying pan over medium heat.

When hot, add the ribbons of chicken, salt and pepper. Sauter (fry while tossing gently) until nicely browned.

Stage 7 - ⌛ 1 min.
Warm chicken salad : Stage 7
Add to the salad bowl. Add 100 ml french dressing (vinaigrette) and mix well.

Stage 8
Warm chicken salad : Stage 8
Serve immediately.
Remarks
You can replace the vinaigrette with rémoulade dressing for example.
Keeping: A few minutes if serving warm, a few hours when cold.
