Just fresh vegetables, each sautéed in turn in olive oil, then combined with chopped spring onions and parsley.

Step by step recipe


Stage 1 - ⌛ 45 min.
Sautéed green vegetables : Stage 1
Prepare the courgettes and cut into small pieces.

Prepare the cabbage and shred.

Prepare the spring onions and chop.

Prepare the leeks and chop.

Stage 2 - ⌛ 5 min.
Sautéed green vegetables : Stage 2
Heat 2 tablespoons olive oil in a large saucepan over medium heat. When hot, add the courgettes and cook until tender.

Salt and pepper at the end of cooking.

Set aside.

Stage 3 - ⌛ 5 min.
Sautéed green vegetables : Stage 3
Do the same for the cabbage.

Stage 4 - ⌛ 5 min.

Do the same for the leeks.

Stage 5 - ⌛ 2 min.
Sautéed green vegetables : Stage 5
Add another 2 tablespoons olive oil to the pan. When hot, add the chopped onions, salt and pepper.

Cook for 1 or 2 minutes until tender.

Stage 6 - ⌛ 3 min.
Sautéed green vegetables : Stage 6
Tip the other vegetables back into the pan, add a knob of butter and some chopped parsley. Mix well.

Leave to heat through and it's ready.
Remarks
Feel free to adapt this recipe using different vegetables, such as whatever you have to hand.
Keeping: A few days in the fridge, covered with plastic film.

A little dessert that's rather long to make, but which will always impress your guests. Layered in a glass: a jellied red fruit coulis, a layer of pineapple charlotte cream, a layer of kiwi coulis, topped with a peeled clementine segment. It's "european" because it resembles the italian flag, and in another version with apricot instead raspberries, the irish flag (a country so dear to me).
