This dish combines artichokes, sautéed with shallot in olive oil, with cooked beef and potatoes (simply heated through).

  • 1 cooked potatoes 14.1 oz cooked potatoes
  • 2 cooked meat 10.6 oz cooked meat
  • 3 shallot 2 shallots
  • 4 purple globe artichokes 3 lb + 1.3 oz purple globe artichokes
  • 5 olive oil 6 tablespoons olive oil
  • 6 parsley parsley

Step by step recipe


Stage 1 - 15 min.
Artichokes with beef
Cut 14.1 oz cooked potatoes and 10.6 oz cooked meat into chunks.

Chop 2 shallots.

Stage 2 - 15 min.
Artichokes with beef
Prepare 3 lb + 1.3 oz purple globe artichokes and cut into 4 lengthways.

Stage 3 - 7 min.
Artichokes with beef
Pour 6 tablespoons olive oil into a large frying pan on medium heat. When hot, add the artichokes, salt and pepper and mix well.

Turn down the heat, cover and leave to cook until the artichokes are lightly browned, stirring from time to time.

Stage 4 - 2 min.

When the artichokes are cooked (tender), leave off the lid and add the shallots (add another 2 tablespoons of olive oil if necessary).

Salt lightly and cook for 1 minute without colouring, while stirring.

Stage 5 - 1 min.

Then add the meat...

Stage 6 - 5 min.

...and potatoes. Cook for a few minutes longer, just enough to reheat the meat and potatoes. Check the seasoning and scatter some chopped parsley over the top.

Stage 7 - 1 min.
Artichokes with beef
Serve on hot plates, with a trickle of olive oil poured over, if you wish.
Remarks
If you don't have purple artichokes, you can use chunks of normal artichoke hearts.
Keeping: A few days in the fridge, covered with plastic film.
