  • 3 purple globe artichokes 1 litre 500 ml purple globe artichokes
  • 4 Parmesan (Parmigiano Reggiano) 100 mls Parmesan (Parmigiano Reggiano)

Step by step recipe


Stage 1 - 5 min.
Gratin of purple artichokes
Preheat the oven to 390°F (200°C).

Butter a gratin dish.

Slice 1 litre cooked potatoes and spread in the bottom of the dish.

Pour a generous trickle of olive oil over.

Stage 2 - 15 min.
Gratin of purple artichokes
Prepare 1 litre 500 ml purple globe artichokes and spread in a layer over the potatoes.

Stage 3 - 2 min.
Gratin of purple artichokes
Grate 100 mls Parmesan (Parmigiano Reggiano) over the top.

Stage 4 - 20 min.
Gratin of purple artichokes
Cook in the oven for about 20 minutes...

Stage 5
Gratin of purple artichokes
...until the top is nicely browned.
Remarks
For a richer version of this gratin, pour some crème fraiche or bechamel sauce over the potatoes.

If you don't have purple artichokes, normal artichoke hearts will do.
Keeping: A few hours in the fridge, covered with plastic film.
