Step by step recipe


Stage 1 - 5 min.
Apple Batter Puddings
Preheat the oven to 390°F (200°C)

Put 100 ml whole almonds into a baking tin and toast in the oven for 5 minutes.

Stage 2 - 3 min.

When cooled, chop the almonds roughly with a knife.

Set aside.

Stage 3 - 2 min.

Put into a mixing bowl: 8 eggs, 160 ml liquid cream, 80 ml caster sugar, 20 ml vanilla sugar and 4 tablespoons Calvados (apple liqueur).

Stage 4 - 1 min.

Beat until thoroughly mixed.

Stage 5 - 2 min.

Butter individual oven-proof dishes.

Stage 6 - 5 min.

Peel 8 apples and slice.

Arrange one sliced apple in each dish.

Pour the batter over the apples.

Scatter the chopped almonds over the top.

Bake for about 20 minutes.

To enjoy at its best, serve hot or warm.
Remarks
For the apples, opt for a fairly tart eating variety, such as Cox's, Reinettes or Elstar (cooking apples like Bramley soften quickly and the slices will not hold their shape so well).

For a more caramelized finish, sprinkle a little icing sugar over the top of the puddings 5 minutes before the end of cooking.
Keeping: Several days in the fridge, covered with plastic film. Reheat beofre serving.
