Step by step recipe


Stage 1 - 15 min.
Warm haricot bean salad
Cook 5 cups white beans until soft.

Stage 2 - 1 min.
Warm haricot bean salad
Drain and keep hot.

Stage 3 - 8 min.
Warm haricot bean salad
Pour 3 tablespoons olive oil into a small frying pan on high heat. When really hot, add 2 cups small pieces of bacon and fry.

Stage 4 - 8 min.

Meanwhile melt 23 cup butter in another pan on high heat, then add 6 slices bread cut into cubes.

Fry until lightly browned.

Stage 5 - 2 min.

Put the beans into a salad bowl, then add the lardons with their cooking fat.

Stage 6 - 2 min.
Warm haricot bean salad
Finsh by adding the croutons, the chopped chives and 15 tablespoons French dressing (vinaigrette).

Mix well and serve immediately while still warm.
Remarks
If you are using dried beans, leave them to soak overnight in cold water before cooking.
Keeping: 1 or 2 days in the fridge, covered with plastic film.
