A simple omelette treated more like a gratin: the omelette forms the bottom layer in the dish, topped with chicken and spinach in a cream sauce and browned in the oven.

Step by step recipe


Stage 1 - 5 min.
Gratin-style spinach and chicken omelette
Cut 100 ml cooked chicken into small pieces.

Prepare ½ shallot.

Stage 2 - 1 min.
Gratin-style spinach and chicken omelette
Pour 1 tablespoon olive oil into a frying pan on high heat. When good and hot, add the chopped shallot.

Salt, pepper and cook for 1 minute without colouring.

Stage 3 - 1 min.

Add the chicken pieces and mix well.

Stage 4 - 1 min.
Gratin-style spinach and chicken omelette
Add 150 ml cooked spinach.

Stage 5 - 2 min.
Gratin-style spinach and chicken omelette
Add 100 ml cream, salt and pepper again then mix well. Turn down the heat and leave to thicken gently.

Stage 6 - 4 min.
Gratin-style spinach and chicken omelette
Meanwhile, break 3 Eggs into a bowl, salt and pepper, then whisk together.

Stage 7 - 1 min.
Gratin-style spinach and chicken omelette
Put a small frying pan on medium heat and melt 10.32 ml butter. Pour in the beaten eggs.

Stage 8 - 4 min.
Gratin-style spinach and chicken omelette
Gently pull the eggs from the edge into the centre with a soft spatula until they are just barely set.

Turn off the heat.

Stage 9 - 2 min.
Gratin-style spinach and chicken omelette
Preheat the oven to 390°F (200°C).

Tip the omelette into a buttered gratin dish.

Stage 10 - 1 min.
Gratin-style spinach and chicken omelette
Spread the chicken and spinach mixture on top.

Stage 11 - 1 min.
Gratin-style spinach and chicken omelette
Top with the grated cheese.

Stage 12 - 20 min.
Gratin-style spinach and chicken omelette
Bake for about 20 minutes.
Remarks
Do take care not to overcook the eggs in stage 8 or they will dry out in the oven.
Keeping
1 or 2 days in the fridge, covered with plastic film.
