Step by step recipe


Stage 1 - 20 min.
Ardennes Salad
Cook 0 kg 9 g potatoes with the skin on.

If possible, use small potatoes, such as "rattes", which are better suited to this recipe.

Stage 2 - 10 min.
Ardennes Salad
Once cooked, peel and slice.

Set aside.

Stage 3 - 3 min.

Cut 0 kg 2 g belly (streaky) bacon into small pieces.

Set aside.

Stage 4 - 3 min.

Stage 5 - 5 min.

Prepare 0 kg 4 g lettuce.

Note: I've used arugula here, but a simple green salad will do just as well.

Stage 6 - 7 min.

In a frying pan over high heat, pour 3 tablespoons oil and when hot, add the lardons.

Grill to taste, then remove to a plate, keeping the cooking fat in the pan.

Stage 7 - 15 min.
Ardennes Salad
Return the pan to the heat, then pour in the potatoes, season with salt and stir.

Grill to taste, then remove withe the grilled bacon plate.

Stage 8 - 1 min.
Ardennes Salad
Return the pan to the heat, pour in 9 tablespoons oil and when hot, add the chopped onion.

Season with salt and pepper, and cook for 1 minute without browning.

Stage 9 - 1 min.

Add the salad...

Stage 10 - 2 min.
Ardennes Salad
...and cook for 1 or 2 minutes, stirring constantly. The lettuce will "fall", i.e. become very tender, so add 6 tablespoons vinegar.

Stage 11 - 3 min.
Ardennes Salad
Add the potatoes and bacon, mix well, check the seasoning and leave to warm through.

Your Ardennes salad is ready.
Remarks
Bacon and potatoes can be prepared well in advance.

Serve as is, or with a dash of vinegar added at the last minute.

1 or 2 days in the fridge, protected by cling film.
