Lambé's salad is a rather original salad with chickpeas, mimosa eggs, cheese and, above all, a crunchy buckwheat pancake, broken into small pieces and added at the last moment.

Step by step recipe


Stage 1 - ⌛ 5 min.
Lambé salad : Stage 1
Toast 1 buckwheat pancake in a frying pan with 20 g butter.

Stage 2
Lambé salad : Stage 2
The pieces should be nice and crispy.

Set aside.

Stage 3 - ⌛ 5 min.
Lambé salad : Stage 3
Chop 2 hard-boiled eggs fairly finely.

Set aside.

Stage 4 - ⌛ 5 min.
Lambé salad : Stage 4
Cut 80 g Cheddar cheese into small cubes.

Set aside.

Stage 5 - ⌛ 2 min.
Lambé salad : Stage 5
Pour 300 g tinned (canned) chickpeas into a bowl.

Stage 6 - ⌛ 3 min.
Lambé salad : Stage 6
Add the eggs, cheddar cheese and chopped parsley.

Stage 7 - ⌛ 3 min.
Lambé salad : Stage 7
Add 5 tablespoons rémoulade dressing and mix well.

Stage 8 - ⌛ 3 min.
Lambé salad : Stage 8
At the last moment, just before serving, add the galette, which you will break into small pieces with your hands, and mix one last time.

Serve immediately.
Remarks
It's important to add the very crunchy patty at the last moment, to keep its crispness, a delicious contrast to the rest of the salad ingredients.

The cheddar cheese can be replaced by another hard cheese of your choice.

If you don't have the time to make a remoulade sauce, a vinaigrette sauce will work just as well.
