Step by step recipe


Stage 1 - 10 min.
Spinach brik parcels
Cut 200 g cooked spinach.

Cut 150 g feta into small pieces.

Prepare and chop 1 shallot finely.

Stage 2 - 2 min.
Spinach brik parcels
Heat 1 tablespoon olive oil in a small frying pan. Add the chopped shallot, salt and pepper and cook for 1 or 2 minutes without colouring.

Set aside.

Stage 3 - 5 min.

Put the spinach into a bowl with the shallot, feta, 1 Egg, salt, pepper...

Stage 4

...and mix thoroughly.

Stage 5

Roll up the parcels:

Place a spoonful of mixture near the bottom edge of a brik sheet.

Stage 6

Roll the sheet up over the filling, folding in the sides...

Stage 7
Spinach brik parcels
...and finish by rolling over again to form a fat "sausage".

Stage 8 - 20 min.
Spinach brik parcels
Press lightly on the parcel to spread the mixture evenly inside.

Make all the parcels like this.

Stage 9 - 6 min.
Spinach brik parcels
To cook the parcels, heat 6 tablespoons oil in a large frying pan on high heat.

When very hot, add the parcels and fry until browned all over.

Serve without delay.
Remarks
You can also deep fry these parcels. This is very quick but, unfortunately, raises the fat content.



If you can't find brik pastry, you can use filo instead.
