Spaghetti Bolognese
Spaghetti "bolognese" (after the town of Bologna, Italiy) is a well-known dish, but so often amounts to nothing more than pasta topped with minced meat in a plain tomato sauce.

Here is a more traditional version, in which the sauce is made with tomatoes, herbs, red wine and - of course - meat.

Step by step recipe


Stage 1 - 5 min.
Spaghetti Bolognese
Rinse the tomatoes and cut out the hard bit around the stalk, then cut into chunks.

If you have the time, you can also peel them.

Stage 2 - 10 min.
Spaghetti Bolognese
Peel 1 carrot and dice small.

Finely chop 1 onion.

Peel 2 cloves garlic.

Rinse 1 bayleaf, 1 sprig thyme and 1 sprig rosemary.

Stage 3 - 2 min.
Spaghetti Bolognese
Pour 4 tablespoons olive oil into a large saucepan on medium heat.

When hot, add the onions, carrot, herbs and garlic.

Salt and pepper, then cook for 2 minutes without colouring.

Stage 4 - 1 min.
Spaghetti Bolognese
Add 500 g minced beef...

Stage 5 - 5 min.

---and cook, stirring frequently (break up any large lumps).

Stage 6 - 5 min.
Spaghetti Bolognese
Then add the tomatoes and stir well.

Leave to cook for 5 minutes.

Stage 7 - 3 min.
Spaghetti Bolognese
Add 500 ml red wine, 200 ml water, 1 beef stock cube and stir well.

Turn the heat down to low.

Stage 8 - 40 min.
Spaghetti Bolognese
Leave to cook uncovered until the sauce is reduced by 3/4.

Remove and discard the bayleaf, thyme and rosemary.

Stage 9 - 8 min.
Spaghetti Bolognese
Cook the spaghetti...

Stage 10
Spaghetti Bolognese
...mix with the sauce and serve immediately.
Remarks
If fresh tomatoes are not in season, use whole tinned ones.
Keeping: A few days in the fridge, covered with food film.
