Step by step recipe


Stage 1 - 4 min.
Spinach and cashew brik rolls
Mix together 450 g Greek yoghurt, 300 g cream cheese and 3 tablespoons lemon juice.

Salt lightly and pepper generously.

Check the seasoning.

Set aside.

Stage 2 - 2 min.
Spinach and cashew brik rolls
Chop 120 g cashew nuts.

Lay a sheet of brik pastry in front of you.

Stage 4
Spinach and cashew brik rolls
Spread a bed of spinach over the third nearest to you, then add a layer of cheese mixture and scatter cashew nuts on top.

Roll up the pastry into a neat parcel, like a spring roll.

Pour a little oil into a large frying pan on high heat. When really hot, fry the rolls until golden brown all over.
