You are probably already familiar with classic hummus. Here's a "green" version, still mainly chickpeas, but with added herbs and vegetables.

Step by step recipe


Stage 1 - 10 min.
Green hummus
Finely chop ½ shallot.

Prepare ½ courgette (small) and cut into small dice.

Peel ½ garlic clove.

Stage 2 - 1 min.
Green hummus
Pour 1 tablespoon olive oil into a small frying pan on high heat. When good and hot, add the diced courgette.

Stage 3 - 2 min.
Green hummus
Cook for 1 or 2 minutes until tender.

Set aside.

Stage 4 - 4 min.
Green hummus
Blend ¾ cup tinned (canned) chickpeas with the shallot, courgette, clove of garlic. parsley (both stems and leaves), ½ tablespoon fresh mint leaves, ½ tablespoon tahini (sesame paste), 1 tablespoon lemon juice, salt and pepper. Moisten with a little of the liquid from the tin of chickpeas.

You should end up with a smooth purée, then check the seasoning.

Stage 5
Green hummus
Your green hummus is ready. Transfer into one or more bowls and drizzle with olive oil before serving.
Remarks
This recipe is very flexible, so you can easily vary the amounts of the ingredients to suit your own taste and what you have to hand.
Keeping: A few days in the fridge, covered with plastic film.
