Tex-Mex chicken burger
For this Tex-Mex inspired burger the usual beef pattie has been abandoned in favour of fried chicken with chilli, put together with sliced avocado and raw baby spinach.

Step by step recipe


Stage 1 - 20 min.
Tex-Mex chicken burger
Prepare all the burger ingredients apart from the meat:

Prepare 2 avocados, slice fairly thickly and drizzle with lime juice.
– Cut 100 g Cheddar cheese into thin shavings with a vegetable peeler.
Prepare 2 onions and slice thinly.
– Rinse and dry 16 leaves fresh spinach.
– Pick the coriander (cilantro) leaves off the stalks.

Stage 2 - 5 min.
Tex-Mex chicken burger
Cut 400 g chicken breast into strips.

Salt and pepper then set aside.

Stage 3 - 10 min.
Tex-Mex chicken burger
Heat 4 tablespoons olive oil in a small frying pan on medium heat. When good and hot, add the chicken pieces.

Fry until lightly browned., then add 2 tablespoons chilli spices at the end.

Set aside.

Stage 4 - 2 min.

Slice 8 Hamburger buns through the middle.

Stage 5 - 5 min.

Toast the bottom halves, sitting the "lids" on top of the toaster to do them lightly at the same time

Stage 6 - 3 min.
Tex-Mex chicken burger
Assemble the burgers: take a bottom half, add some chicken, then onion slices, then avocado.

Drizzle a little lime juice over.

Stage 7 - 1 min.

Add the spinach leaves and cheese shavings.

Stage 8 - 1 min.
Tex-Mex chicken burger
Finish with the top half of the bun.

Tex-Mex chicken burger
Your burger is ready to enjoy.
Remarks
If you like it, try spreading a little mustard on the bun before assembling your burger, or a few drops of Tabasco – or even both.
