  • 3 peeled and chopped tomatoes 23 cup peeled and chopped tomatoes
  • 4 thyme thyme
  • 5 tinned (canned) chickpeas 13 cup tinned (canned) chickpeas
  • 6 cooked spinach 23 cup cooked spinach
  • 7 Parmesan (Parmigiano Reggiano) 1 tablespoon Parmesan (Parmigiano Reggiano)
  • 8 salt salt
  • 9 pepper pepper

Step by step recipe


Stage 1 - 5 min.
Spinach and chick peas "à la milanaise"
Prepare and finely slice 1 ½ tablespoon onion.

Stage 2 - 1 min.
Spinach and chick peas "à la milanaise"
Pour 1.5 tablespoon olive oil into a large saucepan on medium heat. When good and hot add the onion.

Salt, pepper, and cook for 1 minute without colouring.

Stage 3 - 8 min.
Spinach and chick peas "à la milanaise"
Add 23 cup peeled and chopped tomatoes and the leaves from a few sprigs of thyme. Salt and pepper again.

Bring to the boil and leave to reduce slightly.

Stage 4 - 1 min.
Spinach and chick peas "à la milanaise"
Add 13 cup tinned (canned) chickpeas...

Stage 5 - 3 min.
Spinach and chick peas "à la milanaise"
...then 23 cup cooked spinach.

Mix and cook just long enough to reheat the spinach.

Stage 6
Spinach and chick peas "à la milanaise"
Serve with a little Parmesan grated over the top.
Remarks
You can use pecorino or a mature, dry goat's cheese instead of Parmesan.
Keeping: 1 or 2 days in the fridge, covered with plastic film.
