Step by step recipe


Stage 1 - 5 min.
Tomato meat balls
Wash 2 tomatoes, discard hard part and cut in 4.

Stage 2 - 2 min.
Tomato meat balls
Pour 2 tablespoons olive oil into a pan over medium heat.

When oil is hot, add 1 sprig thyme, 1 sprig parsley, 1 sprig rosemary and 1 garlic clove, salt, pepper and cook while stirring for 1 minute.

Stage 3 - 10 min.
Tomato meat balls
Add tomatoes, stir briefly and cover.

Cover and leave to cook for about 10 minutes on low heat.

Stage 4 - 1 min.

After this, remove and discard tomato skins, herbs and garlic.

Add 1 glass dry white wine, mix well and check seasoning, then leave on low heat.

Stage 5 - 10 min.

Meanwhile, cook 20 meatballs in 2 tablespoons olive oil.

Stage 6 - 2 min.
Tomato meat balls
As soon as they are well browned, pour in tomato sauce and mix well.

Tomato meat balls
Serve as it is, or with some white rice or pilaf.
Remarks
For a quicker recipe, leave out herbs and use olive oil with herbs instead of plain olive oil.
Keeping: Several days in the fridge, in a closed jar.
